Cheesy Mushroom and Spinach Croquettas15 - 20 mins 5 - 10 people
These are no ordinary croquettes! This is made with potatoes, spinach, mushrooms, and Eden cheese.
50 grams, Eden MeltSarap
50 grams, Shiitake mushrooms, chopped
100 grams, Spinach, blanched and chopped
150 grams, Potato, mashed
as desired, All purpose cream
1 tbsp, Butter, melted
1 tbsp, Salt to taste
as deemed necessary, Egg (for breading)
as deemed necessary, Flour (for breading)
as deemed necessary, Bread Crumbs (for breading)
Combine Eden Cheese with all the other ingredients in a large bowl. Mix until well incorporated.
Shape potato mixture into small pillows and set aside.
Prepare standard procedure for breading; a) place the following ingredients separately: all purpose flour, beaten egg, bread crumbs b) coat the potato pillows with the flour, dip it in egg, and roll in bread crumbs until well coated
Heat up oil for frying and cook croquettas until crisp and golden in color.
Transfer to plate.
