Shrimp Sandwich25 - 30 mins 5 - 10 people
Spiced shrimps are combined with creamy cheese for a melt-in-your-mouth Mexican-style sandwich.
1/2 lb, Shrimp, peeled and deveined
1/2 tsp, Cumin
1/2 tsp, Garlic powder
1/2 tsp, Salt
1/4 tsp, Chili powder
2 tsp, Olive oil
1, Avocado, diced
1/2 cup, Eden Mayo
1, Chili pepper
1, Lime, juiced
4 leaves, Lettuce
2, Bread rolls, sliced
In a bowl, mix cumin, garlic powder, 1/4 tsp salt, chili powder and olive oil. Add shrimp and coat evenly.
Blend together until smooth avocado, Eden Mayo, chili pepper, lime juice and 1/4 tsp salt.
In a pan over medium heat, cook shrimp for around 5 minutes, until pink.
Toast bread rolls and spread avocado mayo mixture. Layer bread with lettuce leaves and cooked shrimp. Close sandwich with top slice of bread and serve.
