Cheeseball Croquettes5 - 10 mins 5 - 10 people
These potato balls are crisp on the outside and cheesy on the inside.
2 large, Potatoes, boiled and mashed
to taste, Salt and pepper
1/2 cup, Eden Original, cubed
2 pieces, Eggs, beaten
1/2 cup, Breadcrumbs
for frying, Vegetable oil
Season mashed potatoes with salt and pepper. Scoop and make a ball shaped croquette, insert a cube of Eden cheese into the croquette.
Roll each croquette in the flour then dip into the beaten eggs then finally roll into the breadcrumbs. Chill in the ref for at least 30 minutes.
Heat oil in a saucepan. Fry croquettes until they are golden brown. Drain then serve.
