This caldereta has juicy stewed beef and vegetables embraced in Eden cheese for a satisfying lunch or dinner.
1/2 KG BEEF ROUND, CUT INTO SERVING PIECES
1/4 CUP VINEGAR
1 TSP, SALT
2 GARLIC CLOVES, CRUSHED
1/4 CUP COOKING OIL
1 CUP SLICED ONION
1/2 CUP TOMATO SAUCE
1 1/2 TO 2 CUPS BEEF STOCK
1 CUP RED AND GREEN BELL PEPPER, CUT IN STRIPS
1 LAUREL LEAF
1 CUP EDEN CHEESE, CUBED
1/2 CUP, LIVER SPREAD
10 CRUSHED PEPPERCORN
Marinate the beef in a mixture of vinegar, peppercorn, salt, and garlic for 2 hours.
Fry the beef in cooking oil. Add onions and saute until tender.
Pour in tomato sauce and beef stock. Add red and green peppers and a bay leaf. Cover and simmer until meat is tender.
Blend in the liver spread and Eden Cheese cubes. Cook for 5 minutes, then serve.
