Cheesy Mechado

This mealtime classic fills you up with a delicious pork stew!

Ingredients

1⁄2 KG PORK WITH FAT, CUT INTO CHUNKS  

2 CUPS TOMATO SAUCE  

1 ONION, CHOPPED  

5 GARLIC CLOVES  

3 BAY LEAVES (LAUREL)  

4 PCS MEDIUM POTATOES, QUARTERED THEN FRIED  

1 CARROT, CUT INTO CUBES THEN FRIED  

1 BELL PEPPER, SLICED  

1/2 CUP EDEN CHEESE, CUT INTO CUBES  

2 CUPS BEEF STOCK  

1/4 CUP SOY SAUCE  

1 TBSP FISH SAUCE  

SALT  

PEPPER  

3 TBSP COOKING OIL

Method:

In a pot, heat the oil and saute garlic and onions. Add the pork and fish sauce then continue sauteing until color turns to brown.

Pour the tomato sauce, soy sauce, bay leaves, and beef stock then simmer until tender. Add water if necessary.

Add carrots, potatoes, Eden cheese cubes, and bell pepper. Simmer for 3 minutes. Season with salt and pepper according to taste. Serve.
