Cheesy Suman

Mommy Antonette Carino's own special, creamy and cheesy take on this classic Pinoy kakanin is something everyone will enjoy!

Ingredients

2 CUPS WHITE GLUTINOUS RICE,  

13.5OZ COCONUT MILK,  

1/2 CUP SUGAR,  

1 TSP SALT,  

BANANA LEAVES, FOR WRAPPING,  

5 EDEN MELT SARAP, STRIPS,  

1/4 CUP EDEN MELT SARAP, GRATED,

Method:

Rinse the rice until water runs clear then drain. In a wok or heavy pot, combine rice, coconut milk, sugar, and salt. Bring to a boil. Simmer for about 30 minutes over medium heat while stirring constantly, then reduce to lower heat. Remove from heat when rice becomes very sticky and almost dry. Cool before wrapping.

Prepare banana leaves. Scoop the rice mixture and place it over the banana leaves. Add a strip of cheese in the middle of each. Roll banana leaves and fold the sides.

Prepare steamer and arrange the wrapped suman. Steam over medium heat for about 45 minutes.

Serve with sugar and top with grated cheese.
