A twist on the dessert classic, this cheesy Cornbread Bibingka is sweet and satisfying.
1 CUP RICE FLOUR,
1 CUP CORNMEAL,
1 CUP SUGAR,
3 TBSP UNSALTED BUTTER, MELTED,
1 CAN COCONUT MILK,
1 CAN CREAM STYLE CORN,
1 CUP EDEN ORIGINAL, GRATED,
1 TBSP BAKING POWDER,
Preheat oven to 350F and grease a baking pan.
Combine rice flour, cornmeal, salt, and baking powder in a bowl.
In a separate bowl, beat the eggs and add sugar and melted butter. Whisk until foamy.
Add flour mixture and coconut milk to the egg mixture. Mix thoroughly and add creamed corn and cheese. Mix until well blended.
Pour batter into the baking pan and bake for 35 minutes.
Top with melted butter and grated cheese. Serve and enjoy!
