Cornbread Bibingka

A twist on the dessert classic, this cheesy Cornbread Bibingka is sweet and satisfying.


1 cup, Rice flour

1 cup, Cornmeal

3, Eggs

1 cup, Sugar

3 tbsp, Unsalted butter, melted

1 can, Coconut milk

1 can, Cream style corn

1 cup, Eden Original, grated

1 tbsp, Baking powder

Product Used:


Preheat oven to 350F and grease a baking pan.

Combine rice flour, cornmeal, salt and baking powder in a bowl.

In another bowl, beat eggs and add sugar and melted butter. Whisk until foamy.

Add flour mixture and coconut milk to the egg mixture. Mix thoroughly and add creamed corn and cheese. Mix until well blended.

Pour batter into the greased baking pan and bake for around 35 minutes or until a toothpick is inserted and comes out clean.

Top with melted butter and grated cheese. Serve and enjoy!
