Creamy Cheddar Enchiladas30+ mins 5 - 10 people
This Mexican classic is made rich and creamier with Eden cheese.
1/4 LB GROUND BEEF,
1/2 CUP GREEN BELL PEPPERS,
1/2 CUP RED BELL PEPPERS,
3/4 CUP SALSA,
1/2 CUP KRAFT CHEDDAR,
4 PIECES 6 INCH CORN TORTILLA,
2 TBSP FRESH CILANTRO,
Preheat oven 400F.
In a large skillet, cook meat until brown. Add 1/4 cup salsa and simmer for 5 minutes. Stir occasionally. Remove from heat and stir in Kraft Cheddar.
In a baking dish, spread remaining salsa and set aside.
Separately, spoon 1/3 cup meat mixture in each tortilla. Roll tortilla and place seam sides down, over salsa in the dish. Repeat for all tortillas. Top with remaining salsa and cover.
Bake for 20 minutes. Top with remaining cheese and bake uncovered for 2 to 3 minutes until cheese melts. Sprinkle cilantro on top.
