This Mexican dish with tender beef, colored veggies, and creamy Eden Mayo is an exciting merienda treat for the family!
1 LB BEEF SIRLOIN STEAK, CUT INTO STRIPS,
1 RED BELL PEPPER, SLICED INTO STRIPS,
1 GREEN BELL PEPPER, SLICED INTO STRIPS,
1 ONION, DICED,
1 CUP SALSA,
1 PACK TACO SEASONING,
1/2 HEAD LETTUCE,
1/2 CUP EDEN MAYO,
1 TBSP OIL,
8 6-INCH FLOUR TORTILLAS,
In a pan, cook beef in hot oil over medium heat. Add peppers, onion, and taco seasoning. Cook until beef is brown and tender.
Add salsa to the meat then reduce heat to medium-low. Cook for 5 minutes, stirring occasionally. Remove from heat.
Prepare tortillas by putting lettuce leaves on each one. Fill with meat mixture and top with Eden Mayo.
Wrap the tortillas and serve.
