Shrimp Sandwich

Spiced shrimps are combined with creamy cheese for a melt-in-your-mouth Mexican-style sandwich.

Ingredients

1/2 LB SHRIMP, PEELED AND DEVEINED,  

1/2 TSP CUMIN,  

1/2 TSP GARLIC POWDER,  

1/2 TSP SALT,  

1/4 TSP CHILI POWDER,  

2 TSP OLIVE OIL,  

1 AVOCADO, DICED,  

1/2 CUP EDEN MAYO,  

1 CHILI PEPPER,  

1 LIME, JUICED,  

4 LETTUCE LEAVES,  

2 BREAD ROLLS, SLICED,

Method:

In a bowl, mix cumin, garlic powder, 1/4 tsp salt, chili powder, and olive oil. Add shrimp and coat evenly.

Blend the avocado, Eden Mayo, chili pepper, lime juice, and 1/4 tsp salt until smooth.

In a pan over medium heat, cook shrimp for 5 minutes.

Toast bread rolls and spread avocado mayo mixture. Layer bread with lettuce leaves and shrimp.
